Busiate alla Trapanese
SAUCE CHERRY TOMATO sauce 330 g
BUSIATE TUMMINIA 200 g
Sea SALT CRYSTALS 20 g
CONDIMENT OF EXTRA VIRGIN OLIVE OIL AND GARLIC 20 ml
EXTRA VIRGIN OLIVE OIL 20 ml
DRIED BLACK OLIVES, PITTED 10 g
CAPERS in sea SALT, 4 g
UP 4g
BLACK PEPPER 0.3 g
INGREDIENTS
PROCEEDINGS
1. In a large saucepan, bring to the boil 2 liters of water (if you use less water and adjust the salt ratio).
2. Rinse the Capers in sea salt under the running water until you will be completely desalted.
3. Heat over medium heat a frying pan with the extra virgin olive Oil and garlic, dried black Olives and capers. Let it brown on a low heat for 1 minute.
4. Add the tomato Sauce, cherry tomatoes, black Pepper and Salt. Cook for 2 minutes keeping the fire low.
5. When the water for the pasta boils, add sea salt Crystals and the Busiate of tumminia, having the foresight to keep the boiling water to the minimum and mix the dough gently, so as to prevent breakage. To get a perfect cooking al dente, cook the Busiate for 13 minutes (continue cooking for a few minutes in case you want a softer consistency).
6. A minute before straining the pasta, heat the sauce, then drain the Busiate pasta in the pan and mix everything gently.
7. Add the extra virgin olive Oil and arrange the pasta on the plates.
