Homemade sword fish

INGREDIENTS

400 g of the casarecce

1 eggplant round purple

500 g of swordfish slices

1 glass of dry white wine

2-3 tomatoes peeled, cut into cubes

fresh mint

extra-virgin olive oil

To prepare the casarecce with swordfish and eggplant start with the eggplant. Remove the ends and cut them into cubes coarse. Transfer them to a plate, salt them with coarse salt and let stand for at least 30 minutes to lose the water. In the meantime, cut the swordfish in small cubes and fry it in a pan with olive oil. Pour the white wine and let it evaporate.

Add the tomatoes cut into cubes, salt, pepper and cook for 15 minutes. Add the mint chopped by hand and cook. In the meantime, wash the eggplant to remove the salt, tamponatele with kitchen paper and fry them in a pan with olive oil until they are nicely golden.

Add the eggplant to the pan with the sauce of swordfish, add the casarecce, which you have boiled and drained well-al dente, and sautéed for a few moments. Transferred into plates with fresh mint and serve immediately.
